Ingredients
750g pork fillet
1.5kg new potatoes
1/2 bunch of watercress trimmed
Preheat the oven to 200 degrees. Place the fillet [seasoned with salt and pepper, drizzled with some olive oil] on a rack in a roasting tin and roast until it is browned all over, then reduce the oven temperature to 180 degrees. [Roast for 45 minutes.] Arrange the potatoes [seasoned with salt and pepper] in the roasting tin around the meat, 25 minutes before the end of cooking. Turn the meat and baste it with the cooking juices. Cook until the juices run clear, then remove from the oven. Arrange on a long serving dish, in a ring of potatoes and sprigs of the watercress
Nice simple pork roast. I have quite a lot of rosemary sprigs left over from last weekend and so I added them to the pork.
