I took this recipe from thefoodsection.blog. It’s such a simple dish but so full of flavour because of the sage and garlic.
For the vegetables, I made chickpeas with tomatoes which is a simplified version of the chickpea soups I have made in the past.
1 can of chickpeas
8 small tomatoes
1 garlic clove, finely chopped
1 tbsp paprika
Saute the tomatoes and garlic at medium heat for 5 minutes. Add the chickpeas and the paprika. Bring to the boil and simmer covered for 15 minutes.
Oh and just to celebrate how annoyingly hot today is because summer is approaching, I had Pimms with my dinner
