Baked trout with leeks and tomatoes

Ingredients

2 salmon/trout fillets
1 leek or onion, finely sliced
1 tbsp wholegrain mustard
1 tbsp clear honey
juice 1/4 lemon
125g cherry tomatoes, halved
1 1/2 tbsp olive oil

Preheat the fan oven to 180 degrees. Put the leek in a baking tray and bake in the oven for 5 minutes. Remove from the oven.

Whisk the olive oil, mustard, honey and lemon juice together and season with a little salt and pepper. Scatter the tomatoes on top of the leeks and spoon over half the sauce.

Lay the trout/salmon fillets on top of the vegetables and spoon the remaining sauce over them. Bake in the oven for 15 minutes or until the fish is cooked.

After all the wintry casserole cooking I have been doing for the last couple of weeks, I thought it was about time that I do something for summer. Something light for dinner.
