Grilled monkfish with lemon and dill

Taken from “The Best of Good Housekeeping – Light & Easy”


Monkfish fillets (700g)
45ml fresh lemon juice
15ml chopped fresh dill or 2.5ml dried dill
45ml olive oil
2 garlic cloves, skinned and sliced
salt and pepper
lemon slices, to garnish

Whisk together ingredients except fish and season well. Pour over the fish, cover and leave in a cool place for at least 4 hours, turning occasionally.

Remove the fish from the marinade, arrange on a wire rack in a grill pan and grill for about 6 minutes on each side, basting regularly with the marinade.

Serve with a salad.

My parents were at my apartment for a week and we basically spent the whole time cooking and eating. Monkfish is quite difficult to find in Singapore and if you do find it, it’s exorbitant. Waitrose, thankfully has a ready supply of it and at a tolerable price. We bought this monkfish fillet to try out and I opted for a simple recipe to bring out its natural flavours.
