Golden chicken

Serves 5-6

1-2 tbsp oil
2.5 kg chicken
2 tbsp plain flour
1/2 tsp paprika
600ml boiling water

Preheat the oven to 160 degrees. Heat the oil in a large flameproof casserole and saute the chicken slowly on all side until the skin is brown. Season the chicken with salt and pepper

Transfer the chicken to a plate and sprinkle the flour into the oil remaining in the casserole, adding a little more to make a paste. Add the paprika and seasoning, and gradually pour in the boiling water, stirring all the time to make a thick sauce. When the sauce is simmering, replace the chicken, spoon some of the sauce over the top and cover tightly with a sheet of foil and then the lid.

Cook in the centre of the oven for about 1 hour and then turn the chicken over. Continue cooking for about 2 hours or so until the chicken is tender.

When the meat on the legs is tender the chicken is done. Joint and serve with the sauce.
