Roasted chicken with chorizo and cabbage

From Waitrose Everyday Recipe

Serves: 4

Ingredients

1tbsp olive oil
2 tbsp brandy or sherry
1 pointed spring cabbage, cored and shredded
1.2kg pack essential Waitrose 4 British Chicken Quarters
4 large cloves garlic, unpeeled
½ x 250g pack Unearthed Spanish Mini Cooking Chorizo Sausages, diced

Method

Heat the oven to 200°C, gas mark 6. Place the chicken quarters in a heavy-based, shallow, ovenproof casserole dish, then add the garlic cloves and diced chorizo. Sprinkle with the olive oil, brandy or sherry and seasoning. Roast for 15 minutes

Remove the chicken from the oven and lift out of the pan. Stir the cabbage into the garlic and chorizo, then place the chicken back on top. Return to the oven for 30–35 minutes until the chicken is golden and cooked through, with no pink meat

Remove the chicken from the pan and keep warm. Slip the garlic cloves out of their skins and mash gently with a fork. Stir into the shredded cabbage and chorizo, check seasoning and serve with the chicken and some mashed potato.

Been really busy for the last 10 days, as in ‘non-stop action, working past 12 midnight, weekend’ kind of busy. So didn’t managed to do any cooking for the longest time. Finally, today I have had a chance to take a breather (i suspect I am still going to be really busy next week) and do some good old fashioned cooking, instead of munching on mass-produced sandwiches, my food of choice when I am busy.

I was in Waitrose rummaging for sandwiches last weekend when I chanced upon this recipe. It is absolutely brilliant because it brings together two of my favourite ingredients: cabbage and chorizo and they go so well together, the cabbage cooked in the chicken and chorizo juices, absolutely heavenly! Only modification I want to make is to add MORE cabbage; it just wasn’t enough for me!
