Baked cod with vegetables

From the Silver Spoon
Serves 4

Ingredients

4 cod fillets
juice of 1 lemon, strained
80g bacon
50g butter
4 tomatoes, peeled and chopped
1 leek, white part only, thinly sliced
2 carrots, sliced
1 onion, thinly sliced
200ml milk
salt and pepper

Preheat the oven to 200 degrees. Sprinkle the cod with the lemon juice, and wrap in the bacon slices. Melt the butter in a flameproof casserole, add the tomatoes, leek, carrots and onion and cook, stirring constantly, for about 10 minutes, then season with salt and pepper.

Add the fish, cover and bake for about 25 minutes. Lower the oven temperature to 180 degrees. Pour the milk into the casserole, return to the oven and bake for a further 15 minutes. Transfer the fish to a serving dish, ladle the hot cooking juices over it and serve.

Milk is an excellent ingredient for this fish dish, it brings together the sharp taste of the tomatoes and the rest of the vegetables and smoothens it. As you can see from pictures, there’s a lot of vegetables for 1 single cod fillet, I am saving up the sauce to use for pasta during the week.
