1 large onion, chopped
250g potatoes, sliced
2 tbsp olive oil
500g pork loin steak, cut into 8 slices
250g cherry tomatoes
4 thyme sprigs, leaves picked, plus extra sprigs to serve
100ml white wine
100g feta, crumbled
zest and 1 tbsp lemon juice
Preheat oven to 200 degrees
Place onion and potatoes and 2 tbsp olive oil in the roasting tin and roast for 40 minutes.
Scatter the tomatoes, thyme over the cooked potato.
Lay pork on top, add wine, stock, lemon juice and roast for 12 minutes.
Drizzle with a little olive oil. Scatter with feta cheese, lemon zest, top with thyme sprigs and serve.
