Welsh rarebit

At first, I thought that this was a recipe for rabbit stew, rarebit and rabbit, the two words just sound and look alike. But on closer scrutiny, I discovered that its actually an egg and cheese recipe. According to the dictionary, rarebit: a dish of melted and seasoned cheese on toast. Its simple to make and excellent for lazy Sunday lunches.

Ingredients

85g/3oz Wensleydale cheese, chopped 
1 tsp Dijon mustard
2 free-range egg yolks
50ml/2fl oz double cream
salt and freshly ground black pepper
2 slices ciabatta, toasted

Method
1. Preheat the grill to its highest setting.
2. In a large bowl, mix together the cheese, mustard, egg yolks and cream, then season, to taste, with salt and freshly ground black pepper.
3. Place the toasted ciabatta in an ovenproof dish and pour the egg mixture over. Place under the grill and cook for five minutes, until golden and cooked through.
